Easy Summer Suppers

Long summer days provide hours to enjoy our favorite outdoor activities, whether its spending the day at the beach playing in the water, hiking, or gardening. At the end of these long days, there is nothing better than having a quick and easy recipe on hand to whip up. Tacos are simple to make, fun to eat, and delightfully refreshing after a long day in the sun. Pair your tacos with a delicious Mojito (for kids or a non alcoholic alternative serve lemonade) and you have the perfect easy summer supper, that can be enjoyed on the patio or at the kitchen table.

Tacos

Tacos are a simple dinner to prepare and lots of fun to enjoy. If you want to be more gourmet than this recipe provides for, you can always prepare your own taco seasoning, and make your own tortillas. To keep it simple, this recipe calls for pre-made taco seasoning and purchased tortillas.

To Serve Three:
1 package lean ground turkey or beef
1 package taco seasoning
1 head of lettuce
Salsa or chopped fresh tomatoes
12 or more small corn tortillas
Grated cheddar cheese
Sour cream

Start by browning the ground turkey or beef in a large non-stick skillet. Break up the ground meat with a wooden spoon and cook evenly. As your meat begins to be cooked through, add the package of taco seasoning, with the quantity of water called for in the recipe.

While your meat is cooking, warm the tortillas on a griddle. Gently grill the tortillas on each side, then place in a tortilla warmer and cover with paper towels. The tortilla warmer will keep your tortillas warm while you prepare and eat your meal. If you don't have a tortilla warmer, you can place the tortillas in a covered bowl lined with paper towels.

Next chop the lettuce, grate the cheese and chop the tomatoes. Once all of your ingredients are cooked and prepped, serve everything together. Each person can assemble their own tacos to suit their liking.

Mojito

The mojito is both simple to make and delightfully refreshing. Try mixing up this cocktail for you friends on one hot evening this summer.

To Make One Cocktail:
2 oz light rum
1/2 oz simple syrup (can increase if you like a sweet cocktail)
1/2 lime
7-8 fresh mint leaves
club soda

In a tall glass muddle mint leaves and simple syrup, make sure to thoroughly crush the leaves. You can either use a muddler or you can use a long handled spoon. After you have crushed the mint leaves and mixed the simple syrup, squeeze lime juice from the lime half into your glass, then add the lime rind to your glass. Fill your glass with ice, you can also use crushed ice if you prefer. Pour the rum over the ice and top with club soda. Stir gently and enjoy.
