Buffalo Burgers Recipe

Buffalo is very similar to beef, but it is a very lean meat and has a richer, more gamey flavor. You can often find ground buffalo at the refrigerated meat section in your local grocery store.

1/4 - 1/2lb ground buffalo per person
1 slice cheese per person (optional)
1 bun per person

Divide the ground buffalo into equal portions and shape into rounds. Place on a hot grate and cook until the meat is barely pink in the middle and the juices run clear. While the buffalo is cooking, butter the buns and place on the grate to warm before serving if you like toasted buns. Turn the buffalo burgers over halfway through the cooking process, and place the cheese on top of the burger, if desired. Buffalo contains much less fat than hamburger, so when cooked the meat can become drier, you may want your buffalo burgers to be slightly more rare than hamburgers to increase the moistness of the meat. When the meat is cooked to the desired doneness and the buns are warm, remove from heat, place on the buns and serve hot with the desired condiments and sides.
