Favorite Pumpkin Recipes For Fall

Fall is a great time to enjoy learning to cook some simple recipes with your friends and family. When the weather starts to change and you can't be enjoying the outdoors as much as you were, you can find plenty of fun indoor activities to enjoy instead. Try suggesting that you help with one of these simple recipes for your next family dinner.

Baked Mini Pumpkins

Fall is a great time of year to enjoy a variety of delicious squash recipes. You will be able to find a wide selection of squash varieties, each with their own delicious flavor. One of my favorite fall treats is making a baked mini pumpkin.

You will need:
One mini pumpkin per person
Butter
Brown sugar

Start by cutting the top out of your mini pumpkin, as if you were going to carve a jack-o-lantern. Remove the top, and set aside saving for later, proceed to scrape out the seeds and insides of the pumpkin, leaving the firm flesh of the sidewalls intact.

Preheat your oven to 350 degrees. Place your mini pumpkins on an ungreased baking sheet. Now, cut a pat of butter off of you cube, you want no more than 1/2 tablespoon sized pats. Place one pat of butter in the bottom of each mini pumpkin. Next place one tablespoon of brown sugar in the bottom of each mini pumpkin. Finish by placing the top of each mini pumpkin back on and put the bacon sheet in the oven.

Bake your mini pumpkins for approximately 30 minutes, or until the mini pumpkins are soft. Allow to cool for a few minutes. Enjoy warm with a hearty fall soup or other seasonal dinner dish. To eat your mini pumpkin, remove the top and using a aspen, gently scrape the soft flesh from the skin of the mini pumpkin and mix with the melted brown sugar and butter at the bottom of the pumpkin.

Toasted Pumpkin Seeds

Halloween is one of the first fall festivities that you can enjoy. One fall tradition that my family loves is the annual pumpkin carving and pumpkin seed toasting. Everyone in my family loves toasted pumpkin seeds, and toasting the seeds instead of throwing them away is a great way to enjoy more fresh fall produce.

After you have finished carving your halloween pumpkins, you will probably have a whole pile of pumpkin seeds and pumpkin insides. These seeds make great snacks when toasted, and you don't have to waste them by throwing them out. Start your project by separating the seeds from the soft pumpkin insides. This process can be time consuming, but it is also fun to squish your hands around in the pumpkin guts to remove all of the seeds. One method that makes separating the seeds a bit simpler is to put all of the seeds and pumpkin insides in a bowl or sink filled with water. The seeds will float and they will also be cleaned as you separate them.

Once your seeds are removed, preheat your oven to 300 degrees. Toss your pumpkin seeds with olive oil and salt, or soy sauce. Spread your pumpkin seeds in a single layer on an ungreased baking sheet. Place in the oven and toast for approximately an hour. Remove the toasted seeds from the oven and gently stir with a spatula every 15 minutes, until the seeds are golden brown, but not burnt. When done remove the baking sheet from the oven and allow the seeds to cool. You can enjoy the immediately once cool, or store in an airtight container for future snacking.
