What to do with your turkey leftovers?


Everyone loves all of the delicious food cooked and served for Thanksgiving, Christmas and in many families Easter. Most families end up with plenty of leftovers. What can you do with the turkey leftovers? Here are a few ideas to help use up all of those great turkey treats.

Turkey Sandwich

Instead of making a regular turkey sandwich with all of those turkey leftovers, make yourself a special holiday turkey sandwich + you get to use the cranberry sauce that no one ate.

You will need:

2 slices of crusty bread or sandwich bread
Stuffing
Turkey
Gravy
Cranberry relish or jelly

Start with two slices of nice crusty bread, or whole wheat sandwich bread. Take some leftover stuffing and spread it on one side of the sandwich, top that with a bit of gravy. On top of the stuffing place a few slices of turkey. Finish by spreading some cranberry jelly or relish on the second slice of bread. Put the two sides of the sandwich together and enjoy a unique Thanksgiving leftover meal.

Turkey Soup

After you have enjoyed a few days of Thanksgiving leftovers you will probably be left with a bit of turkey and lots of leftover turkey bones. My family likes to finish up the turkey by making a delicious homemade turkey soup. If you don't want to continue eating turkey, you can just make some turkey broth, which can be frozen and used as the base for soup at a later date.

For broth you will need:
Turkey carcass
2 onions, sliced
3 ribs celery, chopped
2 carrots, sliced
1 bay leaf

For the Turkey Soup you will need:
Shredded turkey, removed from carcass
2 onions chopped
3 ribs celery, chopped
3 carrots, sliced
1 bay leaf
Noodles (optional)

Start by removing any turkey left on the turkey carcass. Set this aside to be put in the soup. Chop onion, celery and carrots. Place the turkey carcass with vegetables in a large pot. Cover ingredients with water and bring to a boil over medium low heat. Reduce the heat and simmer for about 3 hours until the vegetables are soft and the broth is nice. Remove from heat and allow to cool. Strain the broth and discard the vegetables and turkey carcass. Set broth aside.

To make the soup, chop the onions, celery and carrots. In the bottom of your large pot, heat a bit of olive oil. Sauté the onions, carrots and celery until soft. Add the broth and bay leaf to the pot. Bring the soup to a simmer over medium heat. Add the shredded turkey to the broth and allow to simmer for approx 20 minutes, until the vegetables are cooked and the flavors have blended. You can also add noodles at the point when you add the turkey, if so, allow to simmer until the noodles are cooked. Serve hot with fresh biscuits.
