Orange Chicken Recipe


Chicken is a simple, quick and nutritious main dish for almost any occasion. If you are tired of your regular chicken recipes, here is a greets idea to switch up your meal plan.

Sauteed Chicken Breast with Orange Pan Sauce Recipe

This is a delicious meal that is fairly simple, but unbelievably delicious.

You will need:
1tsp salt
1/2 tsp black pepper
3 boneless, skinless chicken breast, you will need to pound the chicken with the flat side of a knife or a meat tenderizer until they are about 3/4 inch thick
3 tbsp olive oil
1/2 medium fennel bulb, thinly sliced
3 cloves of garlic, minced
1/3 cup orange juice
zest from one large orange
2/3 cup chicken stock
1/4 cup green olives, pitted and sliced

After you have pounded the chicken breasts, sprinkle each side with salt and pepper. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat until the oil is hot. Place the chicken breasts in the pan and sear until brown on one side, then turn over and sear second side until the meat is firm to the touch and well browned. When you turn the chicken, be sure not to scrape the browned bits off of the bottom of the pan. Remove the chicken breasts and set aside.

Heat remaining oil in the same pan that you seared the chicken int. Add the thinly sliced fennel, and saute until the fennel is soft, about 2 minutes. Add the garlic and saute for approximately 1 minute longer. Add the orange juice and bring to a boil, while scraping the bottom of the pan with a wooden spoon to loosen the brown bits from cooking the chicken, continue until the liquid is reduced, about 2 and a half minutes. Add the stock and increase the heat to which, boil down until the sauce is thick, the consistency of syrup.

Turn the heat back down to medium, add the chicken to the sauce as well as the orange zest and sliced olives. Turn the meat to make sure both sides are covered in sauce. Simmer for a few minutes to combine the flavors of the chicken and sauce and reheat the chicken. Serve immediately, and spoon remaining sauce over each chicken breast.

This dish is excellent when served with rice or a nice crusty bread.
