Recipes for Kid Friendly Camping Meals

mac-n-cheese

This week in celebration of the beginning of spring and the fun of spring break for kids across the country, here are two classic kids favorite recipes.

Homemade Mac and Cheese

You will need:
1lb macaroni noodles, dry
2 eggs
2 cups 2% milk
1 small box Velveeta, cubed
3/4 cup shredded medium or sharp cheddar cheese
1/4 cup shredded jack cheese.

Tip:  If you want an even creamier recipe you can substitute the 2% milk for whole milk or half and half. Or if you prefer a leaner recipe you can even use fat free milk. The Velveeta adds a creaminess to this recipe that is wonderful, however you can substitute more regular cheese, or another soft creamy cheese for the Velveeta if you prefer not to use it.

Directions:

  1. Bring a large sauce pan of water to a boil and cook the macaroni noodles. When the noodles are just done, drain and set aside.
  2. While the noodles are cooking combine the eggs and milk, mixing will.
  3. Next, butter or grease a casserole dish.
  4. Start layering the cooked noodles with the other ingredients in the casserole. 
  5. Start with a layer of noodles, followed by a layer of Velveeta cubes, then a layer of shredded cheese.
  6. Repeat these layers until all of your ingredients are in the casserole. You will want to have at least 2 or 3 layers.
  7. Finish by pouring the egg and milk mixture over the top.

Bake the Mac and Cheese at 350 degrees until it is just browning on top and is bubbly. If you like you can also top the casserole with a layer of buttered bread crumbs.

Oatmeal Chocolate Chip Cookies

Cookies are always fun to make. These combine the wonderful texture and flavor of oats with chocolate, making a wonderful cookie.

You will need:
1 cup butter, cut into slices
1 cup packed brown sugar
1/2 cup sugar
1 tsp vanilla
2 eggs
2 cups flour
2 tsp baking powder
2 cups oats
2 cups semi-sweet chocolate chips
1/4 tsp cinnamon
1/4 tsp nutmeg

Preheat your oven to 350 degrees. Then in a large bowl cream together butter and sugar. Mix until the butter and sugar are fluffy. You can use an electric or stand mixture if you like for this step. Next add the eggs and vanilla and mix thoroughly.

In a separate smaller bowl combine the flour, baking powder, cinnamon and nutmeg. Add the flour mixture to the butter and sugar. Add a bit of the flour at a time if it makes the mixing easier. Make sure that they are thoroughly blended.

Next stir in the oats and chocolate chips. You cannot use an electric mixer for this step. Once all the ingredients are mixed together, get out a baking sheet or two if your oven has room. Using a regular sized spoon, drop spoonfuls of the cookie dough onto the cookie sheet. Make sure that there is some room around each dollop of cookie dough. When the sheet  is full bake in the preheated oven for about 10-12 minutes, or until the edges are just starting to brown.

Remove the cookies from the oven and allow to cool for a bit. Then remove the cookies from the baking sheet and place on a cooling rack. Repeat putting the cookie dough onto the baking sheet and baking until all of your cooke dough is gone.
