Easter Feast — Leg of Lamb | Scalloped Potatoes | Roasted Asparagus

Easter is a great time to enjoy some meals that you perhaps wouldn't cook at other times during the year. Here are a couple festive options for Easter meals.

Leg of Lamb


You will need:
Leg of lamb
4-6 cloves garlic, slivered
1 tbsp olive oil
salt and pepper

Preheat your oven to 450 degrees. Take the meat, if you see an white silvery coating, remove it. Next poke holes evenly over the entire leg of lamb. Insert the slivers of garlic into these holes. Oil the surface of the leg of lamb and then rub with salt and pepper.

Place in an oven rack in an oven pan, fat side up. Put the leg of lamb into the hot oven and reduce the heat to 325 degrees. Cook for 30 min per pound until the internal temperature is 160 degrees for medium rare meat or 145 degrees for rare meat.

Serve with simple green salad and roasted potatoes or try the sides sugessted below.

Scalloped Potatoes

You will need:
2 lbs yukon gold potatoes, scrubbed and sliced into 1/8 inch thick slices
1 tbsp olive oil or butter
1 small onion, minced
2 garlic cloves, minced
5 tbsp butter
5 tbsp flour
2 1/2 cups milk
salt and pepper
1 1/2 cups cheddar cheese, grated

Preheat oven to 350 degrees. Thoroughly scrub the potatoes and cut into 1/8 inch thick slices. The best way to get an even slice is to use a food processor. Next parboil the potato slices briefly, and carefully remove.

Sauté the minced onion and garlic in 1 tbsp olive oil or butter. Next using the minced onion and garlic, proceed to make a white sauce. Put the 5 tbsp butter into the pan, then add the flour and brown, stir constantly. When the flour is browned, slowly add the milk, continuing to stir, making sure that there are no flour lumps. Season the white sauce with salt and pepper and add 1 cup grated cheese.

Spray a 9 by 13 baking pan with nonstick spray, then layer the potatoes and sauce. When finished gently shake the pan to thoroughly mix the sauce and potatoes. Sprinkle the remaining 1/2 cup cheese on top and bak at 350 degrees for approximately 35 min or until bubbly and golden brown.

Roasted Asparagus


You will need:
One bunch asparagus, washed and woody ends removed
2 tbsp olive oil
coarse salt

Preheat your oven to 400 degrees. Thoroughly wash your bunch of asparagus, then break or cut off the wood ends.

Place asparagus on a rimmed baking sheet and evenly coat with olive oil. Lightly sprinkle with coarse salt, such as kosher salt. Then bake at 400 degrees for approximately 5-8 min or until soft and brown.
