Meatless Mondays Menu and Recipes Everyone will Love

Vegetarian or not, meatless Monday is an excellent practice to try. Not only do you have the opportunity to try a few meat-free menu options, but you also get to try some excellent healthy menu options that you can add to your weekly options for menu items.

NachosGourmet Nachos Recipe

These nachos are a favorite family dinner recipe. Start by getting a bag of your favorite tortilla chips and a large oven-proof platter.

1 bag tortilla chips
1 large tomato
1 large onion
1/2 lb cheddar cheese
2 cups refried beans
store bought or homemade guacamole

Preheat the oven to 350 degrees. Start by lining the bottom of the platter with refried beans. Put a layer of chips over the beans, then add a layer of cheese, then a layer onions and tomatoes. Continue layering chips, cheese, onions and tomatoes until you run out and have a large mound of nachos.

Put the platter in the oven and cook for 30 minutes until the cheese is melted and crispy on the outer edges. When done sprinkle with chives and serve with salsa. If there are other ingredients you like on your nachos like diced jalapenos, you should add all of those things to your chip mound.

Pico de Gallo

2-3 large ripe tomatoes, diced and seeded(optional)
1/2 red or white onion, diced
1/3 cup fresh cilantro, chopped
4 fresh jalapeno peppers, seeded and minced
2 tablespoons fresh lime juice

Prepare all of the ingredients and combine in a medium bowl. Serve fresh.

Sauteed Green Beans with Garlic

Fresh green beans are one of the greatest pleasures of summer, and is sure to be a hit at a Labor Day potluck. This recipe makes a great salad, hot or cold.

Approx. 1lb fresh green beans, de-stemmed
5 cloves garlic, chopped
Olive oil

Pull the stems off the green beans, if the beans are large pull out the string from the beans. Drop beans in boiling water for 3 to 4 minutes, drain and plunge the beans into ice water. When the beans are cooled, heat olive oil in a skillet. Lightly sauté garlic in heated oil for a few seconds, and then add the green beans, stirring frequently until warm. Serve warm or cold. If you enjoy garlic add a few more cloves, or less if you don't like the flavor of garlic.

Pesto Sauce

The exact proportions of this recipe can be altered however you like, if you want more oil add a little more, more parmesan, etc. You should alter this recipe to taste how you like your pesto.

1 1/2 cups fresh basil
1/4-cup pine nuts
2 gloves garlic
1/2 cup grated Parmesan cheese
1/2-cup olive oil
1 cup pasta water

1. Combine all ingredients in a blender and mix until smooth.
2. Mix pesto and pasta adding reserved pasta water slowly until desired consistency is reached

When using this pesto as a pasta sauce, be sure to reserve some of the water from cooking the pasta. Pesto has a tendency to make pasta a little dry, adding a little pasta water will keep your pesto sauce and pasta moist and fresh. Homemade pesto also freezes well for use later.
